Baby Romaine Salad with spicy chicken and Chipotle vinaigrette
For Steve's "Welcome Home" dinner, I made the Baby Romaine Salad with spicy chicken and Chipotle vinaigrette from Fine Cooking Issue #74 . We thought this salad was really good and we will have it again soon. The dish includes lettuce, corn, red onion, crunchy fried chicken and cilantro. I embellished with fried tortilla strips. The vinaigrette is great. I know it seems like a light dinner, but Steve does some heavy dining on the road, and a light dinner is "welcome."
